Pass The Bubbly

Here’s to 2008! If you are planning to host this year’s toast and need something bubbly without the alcohol, try Twelve, a new drink developed by New Jersey’s very own world-class chef David Burke (www.davidburke.com).
Why the name? Burke says it’s a drink that’s good from noon to midnight. He poured us a sample of the stuff during a break from taping videos at his Rumson restaurant Fromagerie (www.fromagerierestaurant.com) last weekend. Twelve, so new it doesn’t have a website, is an interesting blend of white, green, and black teas. There’s a smidgeon of herbs and spices like bergamot, cardamom, coriander, and fennel, plus a smattering of citrus. The liquid is finished in a chilled champagne tank, to create the carbonation.
The drink is like a bubbly gingery tea. No sugar, but plenty of flavor and fizz. In a glass, it looks just like champagne. Your no-alcohol guests will be blown away at your thoughtfulness.

Twelve has also been spotted on the shelves at Kings Supermarkets (www.kingswebsite.com) in Short Hills, Hillsdale, Cresskill and Garwood. The bottle resembles wine or champagne; the presentation is pretty and whimsical. Your guests will be impressed at your originality.
